As they say..."the best offense is a good defense"
The quickest and easiest way to avoid a meltdown on your part or your students is to have a thorough plan. There's no easier way for students to get out of hand than for you to have a "chink in your armor."
This of course means that "timing [truly] is everything."
One of the best pieces of advice my husband ever gave me was this: "You have to plan your day's lesson out to the very last minute, if you don't all hell will break loose." And you know what? He couldn't have been more right.
